Ciao! I’m Marco Bellini, and yes, I’m the guy who will gladly spend four hours perfecting a tomato sauce and then tell you, “It’s even better tomorrow.” I’m 38, originally from Bologna, Italy, and now living just outside of Asheville, North Carolina, where the air is fresh, the seasons change with drama, and the farmers’ markets remind me—just a little—of home.

My childhood smelled like garlic sizzling in olive oil and fresh basil crushed between fingertips. My nonna, Giulia, was the kitchen goddess in our family, and I was her loyal little shadow. I still remember being scolded gently for sneaking pieces of parmigiano off the grater. That cheese was sacred—but worth the risk.

When I moved to the States in my early twenties, I didn’t plan to become a chef. I studied architecture. But the kitchen kept calling. It started with dinners for homesick Italian friends, then teaching a few pasta-making workshops, then working weekends at a small local trattoria. Before I knew it, I had traded blueprints for butcher blocks.

Now, I cook, I write, I test, I fail, I succeed, and I laugh about both. That’s what Go Great Food is all about—sharing what works, what’s worth tweaking, and what might go up in flames (literally, in one unfortunate flambé incident).

My style is rooted in Italian tradition but I’m never afraid to mix it up. You’ll find me roasting butternut squash with sage and pancetta one day, and stuffing arancini with smoked brisket the next. I love American ingredients—the boldness of them—and how they can breathe new life into classic dishes.

More than anything, I want you to feel confident and curious in your own kitchen. My philosophy? Good food doesn’t have to be complicated, but it should always come from a place of love. Even if your ravioli fall apart or your tiramisù sinks in the middle, if you made it with care, you’ve already succeeded.
